How is FD interest calculated in India?

Most banks compound FD interest quarterly: Maturity = P × (1 + r/4)^(4 × years), where r is the yearly rate as a decimal.

Is FD interest taxable?

Yes. FD interest is added to your income and taxed at your slab rate. Banks deduct TDS when interest crosses the yearly limit; you can submit Form 15G/15H if your income is below the taxable limit.
